What is this ridge on bread called?

    If the top would be the crown then that’s something like a shoulder (ala wine bottles).

    Am I the only one here who has literally never come across a need to have a name for this? And I bake bread/talk about bread quite a bit

    On dogs, the part beneath their ribcage where the belly is, which on some dogs like greyhounds is much closer to the spine than the ribs were, is called the “tuck.” So that’s how I’ve always thought of that part of the bread.

    It’s caused by using a Pullman loaf pan without the sliding lid. So, you should perhaps call it a Pullman handle…

    If you use the sliding lid on the Pullman loaf pan when baking loaf bread, the bread is almost perfectly square when sliced, with no creases in the side.

    I worked with a baker that called it the “crown” but the Google doesn’t know what I’m talking about when I search for it, so maybe that was just this baker’s unique term for it. Either way, it stuck with me and I’ve called it the crown for a very long time.
